Despite initially pursuing classical theatre—which she left after two days—Florence explored various career paths, including a position at EDF and as a computer graphics artist.

In 1998, she made her stage debut at the café-théâtre Le nOmbril du mOnde as part of the all-female trio, Les Taupes Models, alongside Céline Ianucci and Cécile Giroud.
