Episode Overview
We developed a simple, stress-free flambé technique for aspiring chefs. Half a century ago, steak Diane was a sought-after dish in upscale eateries, featuring pan-seared steak drizzled with a peppery sauce, flambéed with cognac for a dramatic tableside presentation. While this spectacle may seem outdated, it offers an enjoyable element for gatherings. Our goal was to revamp this classic recipe by replacing the cumbersome veal stock with a more accessible alternative, while lightening the sauce—though we adore butter and cream, some versions were overly rich. Additionally, we aimed to create a straightforward flambé process that wouldn't daunt home cooks. Inspired, we decided to extend the flambé theme to dessert with crêpes suzette, a delightful dish of warm crêpes in a vibrant orange sauce.
