Episode Overview
Roger Mooking encounters two barbecue aficionados who have perfected the fusion of flavor and fire for exceptional grilling. In Knightdale, N.C., Pitmaster Christopher Prieto educates his students on the intricacies of smoking and seasoning meats at Prime Barbecue. Together, they infuse a whole hog with traditional Puerto Rican spices before smoking it in a classic North Carolina pit using a blend of pecan, hickory, and cherry wood coals. Meanwhile, in Glen Allen, Va., Roger visits Tuffy Stone, a French-trained chef, pitmaster, and owner of Q Barbeque. When not innovating in the kitchen, Tuffy constructs custom rigs, and Roger joins him in igniting a new setup with hickory coals, preparing to hang flavorful, spiced chickens.
