To discover the most flavorful game meat, you must put in the effort. As the frigid Alaskan winter nears, bears gather in the Chugach Range, indulging in cranberries and blueberries. With summer giving way to fall, these bears have depleted the low-lying fruit and their drive to gain weight leads them to more remote, elevated areas. The strenuous hikes are worthwhile, as the berry-fed black bears offer some of the tastiest meat sought by American hunters. If he’s fortunate enough to catch one on this trip, Steven Rinella plans to celebrate by frying the meat in its own fat.
