These spice blends serve as the foundation for grilling rubs, the essence of tamales, and the flavorful layer in dishes wrapped in banana leaves, along with tangy escabeches and rich stews. We follow the journey of achiote from tree to grinder, then to Rick’s kitchen, where he teaches us to create our own Achiote Seasoning Paste for Short Ribs Kabik, followed by a garlicky “Bistec” Seasoning Paste for Grilled Chicken in Escabeche.
