Saitoh began his acting journey in 1992 with a minor role in the television drama *Ippai no kakesoba*. He soon gained prominence as a model, representing prestigious brands such as Calvin Klein and Issey Miyake.

In 2001, he made a significant mark in film with his role in *Toki no kaori: Remember Me*, a Japanese adaptation of the Korean film *Ditto*. His portrayal of Yūshi Oshitari in the 2006 musical *The Prince of Tennis* further solidified his status in the acting realm. That same year, he starred as Shūya Arisada in the drama *Princess Princess D*, based on Mikiyo Tsuda's acclaimed manga.

Saitoh's breakout role came with the direct-to-video film *BOYS LOVE*, where he played Noeru Kisaragi, a magazine editor entangled with a young model.
