Episode Overview
Roger Mooking journeys to the South to explore two family-owned barbecue spots that have kept their culinary traditions alive for generations. At Smokin' Joe's Bar-B-Que in Townsend, Tennessee, pitmaster Zack Peabody learned the art of barbecue from his grandfather, Joe Higgins. Together, they crafted a giant smoker capable of cooking 1,000 pounds of meat, where Roger and Zack prepare briskets and pork butts. Meanwhile, at Shack in the Back BBQ in Fairdale, Kentucky, Mike and Barbara Sivells transformed a rustic log cabin into a barbecue haven. Roger and Mike fill the smoker with pork shoulders and turkey ribs, whipping up their signature dishes: The Hump and Turkey Ribs.
