Episode Overview
Roger Mooking connects with several culinary masterminds in Tennessee who are taking outdoor cooking to the next level with inventive setups. At Wedge Oak Farm in Lebanon, he collaborates with Chef Trey Cioccia, the force behind Nashville's Black Rabbit, to construct the Burn Tower. This inventive apparatus allows meat, fish, and vegetables to be suspended at various heights around a metal cylinder brimming with hot coals. In Nashville, Roger also visits James Peisker and Chris Carter, the duo behind Porter Road Butcher, where Chris reveals his creative repurposing of an old swing set into a unique cooking device, hanging succulent rib roasts alongside a basket filled with chorizo and kielbasa.
