S01E04 Bush Foods
Episode Overview
Jimmy travels 500 kilometers east of Darwin to the secluded coastal community of Maningrida in Arnhem Land. He explores Maningrida Wild Foods and joins local landowners on a bush food harvesting adventure, where these traditional ingredients are now commercially available. Leila Nimbadja, a traditional owner, shares childhood stories and guides Jimmy in searching for long yam. He reconnects with Don Wilton, one of the few holders of an Aboriginal Coastal Fishing Licence in the Northern Territory, who shows him how to cook seafood using traditional hot coals on the beach. Finally, Jimmy chats with Chef Alan Hickey at Speakers Corner, a popular cafe in Parliament House, where Alan emphasizes their commitment to Indigenous ingredients and prepares their latest dish, the Maningrida Bush Apple Bundle, in collaboration with Maningrida Wild Foods.
