Episode Overview
In this episode, Jimmy explores the incredible seafood offerings of Australia's Top End. He catches up with his longtime friend, seasoned fisherman Billy Boustead, at Shoal Bay near Darwin. Together, they reel in a barramundi, which Jimmy transforms into his beloved Barramundi Meen Moolie. At a Darwin wharf, he encounters self-taught chef Rachael Ciesolka, who teaches him how to prepare her signature citrus mud crab dish. Next, Larrakia woman Leslie Gordon guides Jimmy through the mangroves to gather traditional seafood, sharing insights about the Larrakia's culinary heritage. She demonstrates how to collect and cook longbums over an open flame. To wrap up the day, Jimmy visits a local pub to meet Justin Whitrow, the mastermind behind Smokey J’s Brew and Que, who has created a unique method for smoking crocodile.
