Inspired, Gino cooks his grandfather's version of tagliatelle alla bolognese and delves into the area's famous mortadella. To wrap up his adventure, he searches for the region's iconic pasta, tortellini, and invents his own variation using ricotta, hazelnuts, orange zest, and chocolate chips.
