Tex-Mex cuisine is a favorite of ours, but depending on where you live, you might be better off whipping it up at home. We aimed to explore and perfect two classic dishes: chicken fajitas and huevos rancheros, ensuring they are both authentic and delicious. Chicken fajitas can be trickier than their beef counterparts, as chicken often lacks flavor and can be dry. We were determined to achieve succulent, well-seasoned chicken and vibrant vegetables, avoiding the blandness that often plagues fajitas. Our goal was also to enjoy warm, soft tortillas rather than the stiff ones typically served in restaurants. For huevos rancheros, we wanted to strip away unnecessary components to highlight this beloved breakfast dish. We focused on creating a robust roasted salsa, while navigating the challenge of using out-of-season tomatoes.
