S07E14 Even More Italian Classics
Episode Overview
Just when we believe we've discovered every Italian delicacy, we stumble upon a hidden gem. Join us as we revive one cherished Italian dish and simplify another. Enter chicken francese. While this delightful chicken cutlet may not enjoy the fame of chicken parmigiana or chicken Marsala, its flavor is undeniable. Dusted with a light, eggy coating and served in a zesty lemon and white wine sauce, it should be foolproof. However, our attempts revealed some pitfalls, with overly thick or soggy egg crusts and sauces lacking balance—either too lemony or excessively boozy. Our mission: to perfect a lemony cutlet worthy of our Italian menu. Meanwhile, the classic marinara sauce, although not new, deserves a fresh approach. Traditionally slow-cooked for depth, we sought to create a vibrant marinara that captures rich flavors without requiring all day in the kitchen. Recipes: Chicken Francese Chicken Francese with Tomato
