Unfortunately, many desserts are laden with fat and calories, making them more suitable for occasional splurges rather than everyday enjoyment. Our mission was to craft lighter versions of two beloved sweets: carrot cake and cheesecake, ensuring they were both enjoyable and suitable for any day. Many so-called light carrot cakes fell short, often being dry, heavy, and lacking in texture. We aimed for a moist, sweet, and mildly spiced cake topped with a rich, creamy frosting. Unfortunately, our attempts at light cheesecake were equally disappointing—most recipes resulted in rubbery textures and artificial tastes, far from the delightful tang of a traditional cheesecake. We knew we had our work cut out for us to create a lightened cheesecake that would impress our taste testers. Recipes
