Bonacini's Italy (2018)
S01E11 Lazio
Episode Overview
Once the epicenter of the Roman Empire and home to both Rome and Vatican City, Lazio is a vibrant Italian region filled with energy. Yet, its serene countryside offers a more tranquil lifestyle. Chef Michael Bonacini begins by preparing a traditional spring dish from the rural areas: Mint Fava Bean Soup. Moving on to his primo, he embraces the urban vibe with a classic Roman favorite, Spaghetti Carbonara—this indulgent pasta is creamy without any cream, relying on eggs, cheese, and meat for its richness. Next, he crafts Veal with Sage and Prosciutto, a sumptuous dish enriched with a decadent sauce of beef stock, butter, and Marsala wine. To finish, Michael honors Lazio with a delightful dessert—a soft ricotta cake paired with crispy, chewy almond-flavored Amaretti biscuits.
