Episode Overview

Adam embarks on a brief ferry journey across Cook Strait, arriving at New Zealand's South Island, where he explores Akaroa, a charming French settlement situated within a dormant volcano. His curiosity about the renowned greenshell mussels takes him to Havelock, a hub for an industry generating over $300 million annually. Next, he travels to the coastal town of Kaikoura, which translates to “a meal of crayfish” in Māori. Inspired by Akaroa's French heritage, Adam decides to reimagine the traditional lobster Thermidor with a contemporary twist.
